It reads text, so a site that carries its content in images or heavy animation may come back with very little. You will see exactly which pages it read and what it found — and if that is thin, you can upload a menu or price list, or type in your hours, services and prices yourself.
No. The script is about 6KB and loads after your page, so it has nothing to do with how fast your content appears. The chat panel itself is only fetched when a visitor actually clicks the button, so most people never download it at all.
Yes. The chat button and panel render in isolation from your page's own styles, so your theme cannot break them and they cannot break your theme. You choose the colour, which side it sits on, and whether it wears your logo.
